Diesel without a doubt. If the question had been nicest sounding or quickest then yes, V8. But from a purely off roading point of view then diesel is the best way to go.

V8 are fine when its dry. As soon as you start going through deep water misfireing becomes a big problem. The Rover V8s are notorious for this. Also petrol engines can lack in the torque department too. The 2.2 petrol in my lux was also quite bad through water. For road use and screaming round your local field a V8 is fine. If you want to do anything more serious than that, get a diesel. I think the Izuzu 2.8TD is a good choice.....

Fit a waterproof distributer cap and HT lead kit and a snorkle and it will be fine.
Nor going to take mine that deep though - it cant be a good thing.

went through a 6" deep ford near chelmsford last weekend, weathr was hot s the roof was off the RV and i had 3 mates in it and thought it would be funny to soak us all, bastard thing misfired on at least 3 for the next 5 miles till it dried out, only hit it about 40mph as well. It did work though, we were soaked.
